The rain stopped for a few hours yesterday and the sun finally came out for the first time in ages, so we went to my favourite spot, but not with out a big thermos of the most delicious spicy butternut squash and sweet red pepper soup. It was so easy to make I just peeled a butternut squash and chopped it into chunks and put it in a roasting tray with 2 chopped sweet red pointy peppers, a chopped onion, four cloves of garlic (with the skin on) and drizzled with a little olive oil, then I roasted it at 180c for about 35 minutes (stopping half way through to toss), then i peeled the skins of the garlic off and added it all to a pan with 1.5lt of chicken stock (add more for a thinner soup) then added a generous amount of smoked sweet paprika and chilli flakes, some dried oregano and salt and pepper. then simmered it for 10 minutes and finally puréed it with a stick blender. Luckily there is enough left for lunch today as the weather has been awful again, so I have had a day in my pjs. Gluten-free/dairy-free/refined sugar-free like always.⠀⠀⠀⠀⠀⠀⠀⠀⠀
WHAT YOU NEED:⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup almond flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 tsp baking soda⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tsp cinnamon⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 tsp sea salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup coconut flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup nut butter (I used almond butter)⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup maple syrup⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 tsp vanilla extract⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup finely chopped apple (I used honey crisp)⠀⠀⠀⠀⠀⠀⠀⠀⠀
HOW TO MAKE IT:⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mix ingredients together in a bowl.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Form into cookie shapes and line onto a parchment paper-lined sheet pan. *I then added a little extra cinnamon and apples to the top before I put them in the oven.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Bake at 350 degrees for about 11 mins or until a toothpick comes out clean.

Good morning friends and Happy Monday! Hope you all had a great weekend. If you saw on my stories, I was baking up a storm this weekend prepping for some upcoming client photoshoots this week. One of the recipes included this French Apple Tart. With autumn in full swing, I wanted to use one of the seasons fresh harvests and this tart is the perfect recipe for that. The original recipe is from @entertainingwithbeth, and it's honestly one of my favorite recipes to date. The crust is buttery and sweet while the apples are so, SO tender. It's the perfect balance of flavors without one being too overpowered. I'll be sharing more photos from this shoot in the coming weeks so be on the lookout for that! .
